Fruit quality of five scab resistant apple cultivars (Angold, Ecolette,
Goldrush, Sir Prize and Topaz) from organic growing conditions was tested.
To assess external and internal fruit quality, the following were investigated:
(I) standard parameters (fruit weight, firmness, soluble solids, malic
acid) and (II) sensorial quality by panel tests (fruit size, shape and
color; hardness, texture, juiciness, sweet/acid taste, aroma and overall
flavor).
Large differences in sensory scores for particular quality attribute
were found between cultivars. The hedonic scores showed that the highest
preference was for ‘Goldrush’ and the lowest for ‘Topaz’.
